I tend to go along the same way. Sometimes I start thinking "Hey, using 'Wutanese' is fucking retarded. Common use says '-ian'. Deal."
My Japanese amounts to an intro class five years ago. Still, I remember that you just slap on "-jin" at the end of the country name and that denotes a person from that country.
And now, my thoughts on yaoi demonyms:
Wutai's "Utai" in Japanese. Wutai has ninja, Godo's in hakama, you buy katana there, so therefore it's obviously Japan (never mind it was named for a place in China). Thus, of course Japanese should be used and Japanese rules apply. This means that the Wutai/Wutaians/Wutanese would probably use "Utaijin" to refer to themselves. (At least, in Chofiverse they do.)
Now, what I want to know is Woots vs. Wuts as an offensive name used by the Shinra forces (à la "Japs" and such).
...now, someone really should post something on ff7.
